INGREDIENTS :
- a third of a cup of coconut flour
- 1/4 tsp baking powder
- half cup almond flour
- a pinch of salt
- 1/2 cup heated coconut oil or butter
- 1 cup sugar made from coconut
- 1/2 cup room temperature homemade almond milk or coconut milk
- 2 tsp vanilla extract
- 9 eggs
Process :
- Preheat the oven to 350 degrees Fahrenheit.
- Coat the cake pans using a small bit of coconut oil, lightly
- Set aside a mixture of coconut flour, almond flour, baking powder, and salt.
- For roughly 2 minutes, beat the melted coconut oil/butter, coconut sugar, almond/coconut milk, vanilla, and eggs until well combined and frothy.
- As the liquid components continue to mix, slowly add the dry ingredients. Mix until everything is well combined.
- Spread into two circular 8-inch pans (you can also make cupcakes or a 9×13 cake if you’re not making a layer cake). It yields around 24 cupcakes).
- Bake for 30-35 minutes, or until the centre is firm to the touch (if making a 9×13 cake or cupcakes adjust time up or down accordingly).
- Remove from the heat and set aside to cool completely before applying the frosting.
- If desired, frost with buttercream and cover with fondant (recipe below) (completely optional).
How to Prepare Buttercream
- In a heatproof mixing dish, whisk together the sugar and egg whites.
- Place over a saucepan of hot water and whisk frequently for 2 to 3 minutes, or until sugar is completely dissolved.
- If you don’t feel any sugar granules when you brush some of the egg white mixture between your fingertips, it’s ready! Remove the pan from the heat.
- Whisk on high speed with an electric mixer fitted with the whisk attachment until cool
- Add softened butter to mixer on medium-high speed until mixed.
- Slowly pour in the cooled chocolate and stir until everything is well mixed.
Decorate the cake
- Make sure the sugar syrup has totally cooled.
- Make the frosting according to the directions in this recipe and video.
- Simple syrup should be brushed on each cake layer.
- On the cake platter or cake board, place one layer.
- Spread about a cup of frosting evenly on top.
- Place the second layer on top of the first.
- Spread the remaining frosting generously on top and around the cake.
- Smooth the sides with a spatula or a bench scraper
- The frosting can be smoothed by dipping the spatula in warm water.
- Fill a piping bag with any leftover frosting and a star tip, and create a few swirls or borders.
As desired, place chocolate ornaments.
